Roasting guide for beef

For a really succulent roast, weigh your beef joint and calculate the total cooking time, using the guide below. Remember to allow time for the meat to be rested for at least half an hour after roasting and try to slice it really thinly so that you can enjoy all that tenderness.

Begin cooking: Put the joint in a pre-heated oven set to 240ºC/475ºF/Gas mark 9

After 20 minutes: Reduce the oven temperature to 200ºC/400ºF/Gas mark 6

For rare beef: Roast for 13 minutes per 450g (1lb)

For medium-rare beef: Roast for 18 minutes per 450g (1lb)

For well-done beef: Roast for 24 minutes per 450g (1lb)
