Bite-sized beef canapés

Make it a party to remember by serving up some canapés that are a cut above the usual beige deep-fried food fare. These tempting bites are easy to prepare and taste just amazing!

Bresaola & Rocket Roll-ups
Mix some ricotta with a little pesto and spread over slices of slices of bresaola (air-dried salted beef). Add a little mound of rocket to each one and then roll up to serve.

Roast Beef & Horseradish Crostini
Char-grill slices of baguette, rub with a cut garlic clove, then drizzle with extra virgin olive oil. Arrange thin slices of roast beef on top and garnish with a dollop of horseradish sauce and a sprinkling of chives to serve.

Grilled Beef Fillet with Salsa Verde Croutes
Pulse a mixture of parsley, basil and mint in a food processor with garlic, Dijon mustard, capers, anchovies and enough olive oil to make a thick sauce. Stamp out fillet steaks with a pastry cutter and sear them for a minute or two on each side. Place on rounds of toasted white bread and top with the salsa to serve.

Sesame & Soy Glazed Beef Skewers
Cut beef sirloin into 2.5cm (1”) cubes and marinate in a mixture of shoyu (Japanese soy sauce), sake and mirin. Thread on to bamboo skewers and char-grill for 2-3 minutes on each side, then sprinkle with toasted sesame seeds to serve.

Cumin-scented Kofta Brochettes
Flavour lean minced beef with grated onion and garlic, ground cumin and coriander and a good handful of chopped fresh coriander. Season generously, roll into small oval shapes and thread on to bamboo skewers. Char-grill for about 3 minutes on each side and serve with a minted yoghurt dip.
