The flavour shows where the best grass grows

Field experts

Beef – it’s a grass roots thing with the people and farmers in Ireland. There’s a long-standing heritage in beef farming here. Farms are traditional and family-owned, and the farmers believe food is best when it’s simple and natural.

Michael O’Neill, Carnew, Co. Wexford

Based in Co. Wexford, near the village of Carnew, in the south east of Ireland, Michael O’Neill farms 200 acres, with 40 of these rented from a neighbour.

Michael is a dairy farmer who carries on a ten-generation strong farming tradition and recently developed a rosé veal enterprise to support the main business. 20 acres of his 200-acre holding are planted with maize to supply animal feed during the winter months, with the remainder of the farm under grass. Michael has a herd of 70 cows, predominately Friesians, and produces 500,000 litres of milk annually. The milk is sold to the nearby co-operative and the male calves are retained and reared for rosé veal.
