Beef Burgers with Spicy Red Pepper Salsa

These beef burgers are so simple to make and when served with a colourful salsa, they make a fresh and healthy meal. We think the soy sauce and chilli add an extra zing!

Beef Burgers with Spicy Red Pepper Salsa

Ingredients

Serves 4

  • 450g minced beef
  • 1 onion, finely chopped and cooked
  • 2 tbsp parsley, chopped
  • dash of soy sauce
  • salt and freshly-ground black pepper

    Spicy Red Pepper Salsa

  • 1 red pepper, de-seeded and chopped
  • 2 large tomatoes
  • 1 small onion, chopped
  • juice of ½ a lemon
  • 1 green chilli, chopped
  • 1-2 tbsp olive oil
  • 2 tbsp parsley or basil, finely chopped
  • salt and black pepper
  • Method

    Mix the beef, onion, parsley, soy sauce and seasoning together. Shape into 4 burgers. Refrigerate until you are ready to cook.

    Heat the barbecue. Cook for about 5 minutes on each side until no pink meat remains at the centre of the burger and the juices run clear.

    Spicy Red Pepper Salsa:

    Whizz all the salsa ingredients in a food processor.

    Serve the burgers with the freshly made salsa and a crunchy, green salad.
