For the stir fry
- 450 g Irish beef, cut into stir-fry strips
 - 2 tbsp dry sherry or rice wine
 - 2 tbsp dark soy sauce
 - 1 tsp sesame oil
 - 2 tsp cornflour
 - 120 ml chicken stock
 - 2 tbsp sunflower oil
 - 2 inch piece fresh root ginger, finely grated
 - 275 g mixed prepared greens
 
To serve
- 2 spring onions, finely shredded
 - 1 long red chilli, cut into thin slices
 - steamed Thai fragrant rice
