Delicious Mexican chilli dish

For the chilli

  • ¬? tbsp oil
  • 450 g ¬†minced Irish beef
  • 1-2 onions, chopped
  • 2-3 cloves garlic, crushed
  • ¬? tsp chilli powder
  • ¬? tsp ground cumin
  • 400g ¬†tin tomatoes
  • 125 ml ¬†beef stock or water
  • salt and freshly-ground black pepper
  • 400g can of red kidney beans

To serve

  • boiled long grain white or brown rice or tortillas
  • salsa, guacamole or sour cream, if desired

Step 1

Heat the oil in a large frying pan. Add the beef and brown well.

Step 2

Add the onion and garlic and cook 2-3 minutes. Add the chilli powder, cumin, tomatoes and stock. Stir well. Season and bring to the boil.

Step 3

Cook gently for 35 minutes, stirring occasionally.

Step 4

Add the beans and cook for a further 15 minutes. Serve with rice or tortillas and add salsas and toppings for extra flavour and variety.
