- 2 x 250g Irish Rump steaks
- 400g of mixed wild mushrooms
- 2 duck eggs
- 25g of butter
- 50g of finely chopped shallot
- good pinch of parsley
- 1 clove of garlic finely chopped
- Splash of olive oil
Irish rump steak with wild mushrooms and duck egg
- 2 x 250g Irish Rump steaks
- 400g of mixed wild mushrooms
- 2 duck eggs
- 25g of butter
- 50g of finely chopped shallot

Step 1
Season the steaks well with salt and pepper on both sides. Heat a splash of oil in a frying pan over a medium heat and fry the steaks for about 2 minutes on each side for medium. Remove steak from the pan and allow to rest for 5 minutes.
Step 2
In the same pan that you fried your steaks, heat a small amount of olive oil and start to fry the shallots, garlic and wild mushrooms over a medium heat for 3-4 minutes until cooked then add the nob of butter and chopped parsley.
Step 3
In a clean pan with a splash of oil gently fry your duck egg to your liking.
Step 4
Thinly slice your steak and neatly assemble on a plate with you mushrooms and duck egg.
