- 500ml of red wine
- 1l chicken stock
- 500ml of veal stock
- 1 sprig of thyme
- 1 bay leaf

- 50g of quinoa
- 50g of red quinoa
- 500ml of vegetable stock
- 1 tbsp of parsley, finely chopped
- 2 spring onions, finely sliced

Wild garlic oil
- 100g of wild garlic
- 200ml of pomace oil
